Sweet Potato Winter Mash and Glazed Chicken
Winter can be a difficult time of year to stick to a healthy diet, with cold weather swaying us towards home cooked hearty comfort food. So why not try this high protein, low fat, super healthy and delicious meal to warm you up during the cold winter nights.

Cooking time: 40-45 mins
Serves: 4
250g sweet potatoes, chopped
200g carrots, chopped
2 medium parsnips
2 large leeks, chopped
4 skinless chicken breasts
1 lemon
2 tbsp honey
Place the carrots, sweet potato, leeks and parsnips into a large saucepan of boiling water and leave to cook for 15 minutes.
Preheat the grill on high. Grate the zest from the lemon and squeeze 2 tablespoons of the juice. mix the honey with the lemon zest and the juice and braise the chicken breasts. Put the chicken glazed side up on a foil lined baking tray and grill for 5 minutes. Turn carefully and brush on the remainder of the honey and lemon mixture. Grill for a further 5-6 minutes until cooked through. Roll the cooked chicken in the caramelised honey on the tray for a golden glaze.
Drain the carrots, sweet potato, leeks and parsnips and mash roughly. Season to taste. Serve the chicken on a bed of mash with a squeeze of lemon and a lemon wedge on the side.
