Speedy Sweet Potato Cottage Pi3 
One of the nations favourite dishes, cottage pie is a hearty comfort dish enjoyed by most. The usual recipes take minutes to prepare but then a good while to cook…however this recipe is designed to take a few shortcuts but the end result is just as good, if not better!!
Prep Time:  10 mins
Cook Time:  15 mins
Serves 2
250g lean beef mince
50g frozen peas
150ml beef stock
3 tbsp Worcestershire sauce
1 small carrot
1 small onion
1 large sweet potato, peeled and roughly chopped
1/2 tbsp coconut oil
salt and pepper to season

  • Cook the sweet potato in the microwave for 6-8 minutes until soft. Roughly mash and add a little salt and pepper to season.
  • Melt the oil in a large frying pan and cook off the carrot and onion, then adding in the mince and leave to brown. Once the mince is completely brown (no pink bits), drain out some of the fat from the pan. Throw in the peas and the other ingredients including the beef stock. Leave to simmer until the sauce has thickened.
  • Spoon the mix onto a plate and add the mashed sweet potato on top….enjoy!
