Skinny Peanut Butter Cheesecake
Cheesecake is one of the world’s favourite desserts with millions of different flavours. This peanut butter cheesecake recipe is a lightened up version to tantalise the tastebuds and leave you feeling satisfied and guilt-free.
A glorious combination of vanilla, peanut butter and banana…you won’t miss the calories in this skinny slice of deliciousness!

Cooking time:     40-45 mins
Serves:     10
Ingredients
For the base:

  • 1 cup ground almonds
  • 8 tablespoons flax seeds
  • 2 egg whites
  • 40g peanut butter
  • Mix the egg whites until stiff then add the other dry ingredients.
  • Press down into a round cake tin and bake at 180 degrees for 10 minutes
  • For the cheesecake:

    • 500g quark
    • 40g peanut butter (preferably smooth)
    • 2 egg whites
    • 1 banana (mashed)
    • 2 scoops vanilla protein powder (optional, add vanilla extract if making without)
    • 2 tablespoon stevia
  • Mix the egg whites until stiff then add the other ingredients, pour onto the baked base.
  • Bake at 180 degrees for 40 minutes.
  • Decorate with chopped recess mini peanut butter cups, crushed peanut oreos or drizzle with melted peanut butter.
  • Cool and serve.
