Hearty Lamb Tagine
This dish is another hearty beast of a meal, packed full of flavour and to-die-for slow cooked lamb…easy to prepare, and takes just 90 minutes to cook until its ready to serve and enjoy.

Serves:    2
Ingredients:
600g stewing steak, cut into chunks
1 tbsp coconut oil
1 onion, diced
2 garlic cloves, diced
2 ripe tomatoes, chopped
2 tsp cumin
600ml chicken stock
Pinch of saffron
1 tsp ground cinnamon
 
Method
Method:

  • Place the spices into a small bowl and mix to combine. Place the lamb in a large bowl and toss together with half the spice mix and leave to marinate.
  • Preheat the oven to 180 degrees.
  • Heat the coconut oil in a large casserole dish. Add the onion and the remaining spice mix, cook on a gentle heat for 10 mins until the onions are softened. Add the garlic and cook for a further 3 minutes.
  • In a frying pan, heat the other tbsp of coconut oil and add the lamb once melted. Allow the lamb to brown on all sides then add the meat to the casserole dish. De-glaze the frying pan with the chopped tomatoes and 1/4 pint of water, add to the casserole dish.
  • Add the stock to the pan and mix together all the ingredients.
  • Place in the oven for 90 minutes until the meat is tender.
  • Serve with rice or cous cous.
