Cajun Salmon with Spicy Cucumber Relish
Salmon and avocado are super healthy, tasty, and packed full of healthy fats. Cajun is the perfect spice to compliment this dish, teamed up with this fresh and spicy cucumber and sweetcorn relish…you’ll be left wanting more…!

Serves 2
Ingredients
1 1/5 tbsp cajun spice
2 tbsp olive oil
1 tbsp coconut oil
2 x 120g skinless and boneless salmon fillets
1/4 cucumber, finely sliced
2 spring onions
110g sweetcorn, drained
1 red chilli, deseeded and finely chopped
3 cherry tomatoes
2 tsp red wine vinegar
handful of chopped coriander
1/2 avocado
15g cashew nuts
lemon wedge, to serve
Method
1. Mix the cajun spice with half of the olive oil and roll the salmon fillets in the paste until coated.
2. Melt the coconut oil in a frying pan and gently lay the salmon fillets. Cook the fish for about 8-10 mins, turning regularly.
3. Mix together in a bowl the avocado, tomatoes, cucumber, sweetcorn and cashews. Add in the red wine vinegar, remainder of the olive oil, lemon wedges and coriander.
4. Ensure the salmon is cooked through -by cutting into it and checking it is a matt pink colour.
5. Serve the salmon on a plate, top with the relish and scatter with a few extra cashews.
